This is such a simple but delicious dessert to make - and looks like a lot more effort went into it than really did!
I pre-made the sweet pizza crust (more of a large flat biscuit) this afternoon while Riley was in school & Remy was napping - then all that was left to do once it was cooled was for Remy to help spread the mascarpone on the base and throw on some fruit (which I later re-arranged while she shovelled blueberries into her mouth!).
The great thing about this dessert is that you can use any fruit toppings you like.
I used kiwi, strawberries and blueberries on this one, but bananas, peaches, raspberries, pineapple - any soft fruit would go great on this.
Crust -
- 175g caster sugar
- 250g plain flour
- 100g butter
- 1 tsp vanilla essence
- 1 large egg
- 1/3 teaspoon baking powder
- 1/3 teaspoon salt
- Preheat oven to 180C
- Beat the butter and sugar together in a large bowl until fluffy. Add in vanilla and eggs and mix until combined. Add the dry ingredients (flour, baking powder, salt) and mix through.
- Roll dough into one big cookie and place on a round baking sheet. Sprinkle with 2-3 tablespoons sugar. Bake for 17-20 minutes, then leave to cool.
- Frosting -
- 1 tub mascarpone cheese
- 1 tsp vanilla essence
- 2 tbsp confectioners sugar
- Cream mascarpone in mixing bowl - add vanilla essence & sugar and stir though.
