Apple Strudel.



What a busy week! Things are a bit all over the place right now (literally, boxes everywhere!) with our getting ready to move in two days time, and we definitely don't have the time or the counter top space (yep, boxes there too) to be making anything too complicated, so we decided to make a very simple dessert that only required us to use four ingredients - a ball of our home-made sweet pastry defrosted from the freezer, apples, sugar and mixed spice.
Riley was helping me, and the only cooking space we could find that didn't have boxes on it was the kitchen table, so we made do with that!



Strudel is such a delicious winter dessert, and this recipe is a nice change from the usual puff pastry ones,  it's perfect served hot with a big blob of natural yoghurt on a cold winter evening.


  • 300g Sweetened Short Crust Pastry
  • 2 red apples (peeled, cored, and quartered)
  • 3 tbsp brown sugar
  • 1 tbsp mixed spice
  1. Preheat oven to 180 degrees C
  2. Slice apples thinly, and mix in bowl with brown sugar and mixed spice
  3. Roll pastry into a large circle.
  4. Place apple mixture in a strip through the middle of the pastry leaving a small gap at each end.
  5. Fold up sides and end of pastry to make a loaf.
  6. Place on top of greaseproof paper on a baking tray and bake for 20-25 minutes, or until firm and golden brown on top.
