Baked Broccoli Bites

We are finally settled into our new home, and loving it - there's just something amazing about waking up and seeing the sun rise over miles of countryside.
We're in such an amazing spot, high up on a hill, right now we're working hard on making our new house a home.


We've been working so hard on our new home, in fact, that we've been working steadily through our stash of  home-made freezer meals, and haven't done much cooking, so today I enlisted the help of the two best little chefs I know (who today, were entirely pink!)  to make us a healthy snack - baked broccoli bites.

Usually we don't all cook together - I'll let them take it in turns to help out in the kitchen to avoid any squabbling, but today, as they were both excited to put their new kitchen to use - they made a joint effort to get along and work together - and I must say I was very proud, they make a great cooking team!




These are such fun and tasty snacks, great served with a dollop of tomato ketchup.
This recipe uses a whole head of broccoli, including the stem, which is packed with nutrients and flavour.



If your kids aren't the biggest fans of broccoli (and mine really aren't) then these could be the best way to get it into them - all 20 of these little snacks were gone within an hour of coming out of the oven - a big hit with my kids, and really, what's a better sight for a mum than seeing her babies stuff their faces with broccoli!

  • 450g steamed broccoli (drained of excess water and crushed)
  • 150g cheddar cheese
  • 3 eggs
  • 100g wholewheat breadcrumbs


  1. Preheat oven to 200 degrees C
  2. In a large mixing bowl add all ingredients until combined.
  3. Form mixture into 20 individual balls and place on baking tray lined with greaseproof paper.
  4. Bake for 25-30 minutes, until crispy and browning.
  5.  Leave for 15-20 minutes to cool, and enjoy!
