This recipe is too good to not share, so here it is, the result of my needing an extra side dish for our Sunday roast, and getting a bit creative this afternoon - Hazelnut, Cranberry & Raisin Stuffing (so good, it's definitely going to be a Sunday regular from now on!)
- 130g chopped hazelnuts
- 100g whole-wheat breadcrumbs
- 80g chopped raisins
- 80g chopped dried cranberries
- 2 tsp wholegrain mustard
- 1 onion (finely chopped and fried for 5 minutes in 1 tbsp olive oil)
- zest and juice of half a lemon
- 2 tbsp dried oregano
- 2 tbsp dried thyme
- 4 tbsp apple juice
- Mix all ingredients together in large mixing bowl.
- Cover with cling film and leave in fridge for 1 hour.
- Bake at 190 degrees C for 20-25 minutes, stirring halfway through.
- Enjoy with a roast dinner!
