Hazelnut, Cranberry & Raisin Stuffing.

This recipe is too good to not share, so here it is, the result of my needing an extra side dish for our Sunday roast, and getting a bit creative this afternoon - Hazelnut, Cranberry & Raisin Stuffing (so good, it's definitely going to be a Sunday regular from now on!)



















  • 130g chopped hazelnuts
  • 100g whole-wheat breadcrumbs
  • 80g chopped raisins
  • 80g chopped dried cranberries
  • 2 tsp wholegrain mustard
  • 1 onion (finely chopped and fried for 5 minutes in 1 tbsp olive oil)
  • zest and juice of half a lemon
  • 2 tbsp dried oregano
  • 2 tbsp dried thyme
  • 4 tbsp apple juice
  1. Mix all ingredients together in large mixing bowl.
  2. Cover with cling film and  leave in fridge for 1 hour.
  3. Bake at 190 degrees C for 20-25 minutes, stirring halfway through.
  4. Enjoy with a roast dinner!
